Meatloaf Beetloaf

Combine beets, carrots, walnuts, onions, oats, and bread crumbs in a large bowl. beat eggs, parsley, bagel seasoning, and liquid aminos in a smaller bowl. mix into the veggie mixture and stir to combine. transfer to the prepared casserole dish and top with ketchup. bake, uncovered, in the preheated oven for 1 to 1 1 2 hours, depending on how. Transfer beetloaf mixture to the greased loaf pan, using a spatula to smooth the top evenly. bake for 55 65 minutes, until top is firm and just slightly crisp. remove beetloaf from oven and let it cool 8 10 minutes before slicing and serving. beetloaf can be made ahead and refrigerated. when ready to serve, reheat at 350 degrees for 15 18.

Instructions. preheat oven to 400° f. line two baking sheets or large oven safe dishes with parchment paper. line two bread pans (approx. 7.5 x 3.5 inches) with parchment paper. to begin, peel and dice your beets and place them on the first baking sheet. drizzle with 1 tablespoon of olive oil and some fresh thyme.
